I haven't many any cheese except chevre and paneer for quite a while, finally doing a batch of (fast) mozzarella. Pizza tonight! Sourdough is started and in the slightly warmed oven (because the house is freaking cold). I love this pizza recipe, though today I'm use sourdough for the crust (it's more the technique that's important): https://www.kingarthurbaking.com/recipes/crispy-cheesy-pan-pizza-recipe
I've only got 2 goats milking now, but one of them is immensely productive still, so I'm getting about 2L of milk per day.
