I watched a van conversion video in which the builder installed a two meter by half meter granite countertop. It's a solid 30mm thick and they could barely lift it during installation.
Also, every other surface is 20mm hardwood ply.
The builder lost their home and so was making the best of it. I do understand the urge to make the van feel like a "real home" by reproducing house construction.
That said, I couldn't deal with the extra fuel costs and wear on the engine.

One idea that's stuck with me is that a van conversion is more like fitting out a sailboat than a house:
- Everything will get wet
- Weight matters
- All items need a secure home
- Shelves and counters need lips
- Fix those rattles
- Ventilate or enjoy your black mold
- No seal is permanent
- Know your maintenance schedule -
- Solid core or freely moving wire will break
- Grommets in all passthrough holes
- Bumpers on corners, especially near your head
- Everything breaks, make it removable
- Rain can fall sideways
- No open flames
- No, really. Zero open flames
- Don't put the head in the kitchen
- Holes in the hull are generally a Bad Idea -

On your van I see more a granite surface plate rather than just a countertop:
